The finest pulp olives are pitted and then finely minced through a careful artisan process, following their maceration in brine.
To the olive paste (or tapenade) thus obtained, Extra Virgin Olive Oil is added, allowing the product to retain the traditional fragrance of the Taggiasca olive.
